De BiE Wild Cider 2 Staffelter Hof light orchard fruitsMade from apples from our organic high stem orchard, this cider undergoes a natural (wild) fermentation, with only 20mg L of sulfite added during pressing. Bottled in July 2023 after a month of fermentation and 9 months of aging on the lees. At bottling, we added 8g L of sugar to initiate a secondary fermentation in the bottle, creating fine bubbles. We rely on natural fermentation for this process, without the addition of commercial yeasts.
