It is not Beaujolais, with its volcanic granite and carbonic maceration tradition. It is something cooler and more northerly, closer in spirit to a light Burgundy red than a glou glou house wine. Wilfried Crochet uses it here in the simplest possible way: whole clusters, fermented and bottled before the fermentation is finished, the CO2 from those
